Cajun Recipes | The History of Gumbo

Gumbo is a stew or soup that originated in Southern Louisiana during the 18th century. It consists primarily of a strongly-flavored stock, meat or shellfish, a thickener, and the vegetable holy trinity of celery, bell peppers, and onions.  A Gumbo is often categorized by the type of thickener used: the African vegetable okra, the Choctaw spice filé powder, or the French base made of flour and fat, roux. The dish likely derived its name from either the Bantu word for okra (ki ngombo) or the Choctaw word for filé (kombo).

There are several different varieties of Gumbo. Creole gumbo generally contains shellfish, tomatoes, and a thickener. Cajun gumbo is generally based on a dark roux and is spicier, with either shellfish or fowl. Sausage or ham are often added to gumbos of either variety. After the base is prepared, vegetables are cooked down, and then meat is added. The dish simmers for a minimum of three hours, with shellfish and some spices added near the end. If desired, filé powder is added after the pot is removed from heat. Gumbo is traditionally served over rice. A third, lesser-known, variety, the meatless gumbo z’herbes, is essentially a gumbo of slow-cooked greens sometimes thickened with roux, with rice served on the side.

Gumbo is a cajun culinary favorite and has been for many years.  It is hard to find a restaurant in South Louisiana that doesn’t serve some variety of Gumbo.  Everyone seems to have their favorite as well.

My son Jeremy and I made this cake in our slow cooker recently. It is so moist and easy to make and it only took three hours.

I just love making new recipes in a slow cooker! It is one of the chocolate cake recipes that is in my “Slow Cooker Meals” cookbook.  I’m so glad someone invented this slow cooker chocolate cake recipe.  Of all the slow cooker desserts in my cookbook, this is one of the favorite slow cooker cakes made so far.

 

What makes it Triple Chocolate? Because it has chocolate cake mix, chocolate pudding mix, and chocolate chips. That’s a sure-fire way to quench your chocolate craving! One can never have too much chocolate. However, some people may think it sounds like it is too much chocolate or that it is too rich. On the contrary, the flavors merge together to be moist and delicious. Just chocolate goodness. You have to try this slow cooker recipe today!

 

TRIPLE CHOCOLATE CAKE in a slow cooker

 

18 1/2-oz. package chocolate cake mix

8 oz. sour cream

3.9-oz. package instant chocolate pudding mix

12 oz. package chocolate chips

4 eggs, beaten

3/4 cup oil

1 cup water

Vanilla ice cream, optional

 

Place all ingredients except ice cream in a slow cooker; mix well. Cover and cook on high for 3 to 4 hours. If desired, serve with ice cream. Makes 8 to 10 servings.

Changing How You Eat

As you may know, not fueling up with the right healthy eating for families
nutrients can affect how well your body performs
and your overall fitness benefits.  Even though
healthy eating is important, there are myths that
hinder your performance if you listen to them.

Below, you’ll find some myth busters on healthy
eating.

1.  Working out on an empty stomach.
If you hear a rumbling noise in your stomach, the
rumbling is trying to tell you something.  Without
listening to them, you are forcing your body to
run without any fuel.  Before you exercise or do
any physical activity, always eat a light snack
such as an apple.

2.  Relying on energy bars and drinks.
Although they are fine every once in a while, they
don’t deliver the antioxidants you need to prevent
cancer.  Fruits and vegetables are your best bets,
as they are loaded in vitamins, minerals, fluid,
and fiber.

3.  Skipping breakfast.
Skipping breakfast is never a good idea, as breakfast starts the day.  Your body needs fuel as soon as possible, and without it, you’ll be hungry throughout the day.

4.  Low carb diets.
Your body needs carbohydrates for your muscles and the storing of energy.

5.  Eating what you want.
Eating healthy and exercising doesn’t give you an all access pass to eat anything you want.  Everyone needs the same nutrients whether they exercise or not, as well as fruits and vegetables.

6.  Not enough calories
Although losing weight involves calories, losing it too quickly is never safe.  What you should do, is aim for 1 – 2 pounds a week.  Always make sure that you are getting enough calories to keep your
body operating smoothly.  If you start dropping weight too fast, eat a bit more food.

7.  Skip soda and alcohol.
Water, milk, and juice is the best to drink for active people.  You should drink often, and not require on thirst to be an indicator.  By the time you get thirsty, your body is already running a
bit too low.

Changing how you eat is always a great step towards healthy eating and it will affect how your body performs.  The healthier you eat, you better you’ll feel.  No matter how old you may be, healthy
eating is something you should strive for.  Once you give it a chance, you’ll see in no time at all just how much it can change your life – for the better.
